High attenuation is critical for a stout of this gravity — WLP007 will drive it to a dry, satisfying finish. Pitch a large starter (2L stir plate). Ferment at 68°F. Once primary is done, ramp to 72°F for a full week to ensure every last gravity point is consumed before packaging.
